Golden with a rush of bubble on the pour that quickly disappear. Lemon creams on the nose, lanolin and aloe vera in an exceedingly tense, bone-achingly dry palate. White-knuckled austerity. Grapefruit-peel oils build substantial bitterness into the structure. Adamantly demands food – good with very briny green olives, and would be, I suspect, even better with salty smoked fish, oysters (I'd love to try it with Fiona Beckett's suggestion for brut nature champagne, Simon Hopkinson's oysters Rockefeller), or maybe a bacalhau dish. Makes a dramatic statement. Tastes of sheer cliff faces pounded by cold ocean. (TC)
