Crystallum's Clay Shales Chardonnay is a lovely cool climate style; succulent and juicy with a saline edge to balance. Grapes for the Clay Shales come from a single vineyard (comprising clay and shale, unsurprisingly!) at 300 metres above sea level in the mountains behind the town of Hermanus in the Walker Bay. This region is characterised by a cool climate that results in delayed ripening and a late harvest, where optimum fruit ripening is balanced by natural acidity. 2018 was an excellent vintage, but why not see for yourself?
